Poor Man's Pumpkin Latte

Waking up and brewing a fresh cup of coffee first thing in the morning is a ritual I look forward to everyday. It isn't due to a dependency on caffeine either. I've switched to decaf for various health reasons although some days I do have a cup of the leaded stuff. The smell of coffee is unlike anything other and I find the brewing process to be meditative. 

My morning cup has been pretty consistent since the weather turned chilly. I hesitated to share the Poor Man's Pumpkin Latte recipe so that I could make amendments to the ingredients and measurements. It turns out the first attempt has been my favorite ratio of pumpkin, healthy fats, spices and coffee. Since I've shared multiple photographs of this habit, I think it is finally time I share how to make it! 

The Poor Man's Pumpkin latte is my take on a fall inspired bulletproof coffee. It is certainly less expensive than a pumpkin latte from your coffee shop even taking into account the extra ingredients. I like to store my pumpkin puree in a storage container in the fridge. By purchasing my grass-fed butter and coconut oil from the local Aldi, I really manage to keep costs down and incorporate some healthy fats into my diet. 

I recently tried Paleo Gluten Free Eats recipe for Pumpkin Chocolate Chip Cookies and found them to be utterly indulgent next to my Poor Man's Pumpkin Latte! They're great on their own too! Below is an interior view of the cookie. 

Poor Man's Pumpkin Latte

Poor Man's Pumpkin Latte

1 cup of freshly brewed Coffee

1 Tbs Grass fed Butter or Ghee

1 tsp Extra Virgin Coconut Oil

1 tsp Coconut Sugar

1 Tbs Pumpkin Puree

1/8 tsp Pumpkin Pie Spice

1 Tbs Organic Heavy Cream

Place all of the ingredients into a blender and blend for 30 seconds or so. This allows the healthy fats and spices to emulsify nicely and creates foam. The heavy cream can be left out or substituted for full fat coconut milk. It does add to the "latte" effect.
